We love our Oven Crisp Flounder. We love a classic Chicken Piccata. So we decided to combine the two, creating a simple, fresh, delicious meal that comes together in minutes: Flounder Piccata! Since we’re baking our fish, it also cuts down the amount of butter we need to use!

These ingredients couldn’t be simpler!

Ingredients: 

-1 pack Dickies Oven Crisp Flounder
-2 tbsp unsalted butter
-1/2 c. chicken broth or dry white wine
-1 lemon
-1/4 c. brined capers
-parsley for garnish

Preparation.

  1. Bake flounder according to package directions. (tip-broil for last 3-4 minutes to get an extra crispy crust! Be sure to keep an eye on it)
  2. In a medium skillet or saucepan, melt butter. Add wine, juice of 1/2 the lemon, and capers. Let simmer and reduce.
  3. Plate up your fish, and drizzle the sauce over top. Garnish with parsley, and the other half of the lemon sliced.

*Since you’re not cooking the fish in the pan, you won’t have those “crispy bits” to scrape up as you add the wine. This allows us to cut the butter used in half! You can always add the fish to the pan instead of broiling it, but the breading will absorb a lot of the butter, and you will need to add more to the sauce.

Simple enough for weeknights, and dare we say fancy enough for date night? (hint, hint 🙂
